Not everything always works out as expected, sometimes things just go bananas and a bit nuts. Just make the best out of it – turn it into a banana-bread and enjoy the ride!
Pre-heat your oven to 180 , and take out your loaf pan.
200g whole spelt flour
2 tablespoon coconut blossom sugar
1 tablespoon vanilla infused sugar (use your old scraped out vanilla beans together with raw cane sugar)
1/2 teaspoon of cinnamon
1 dash of salt
2 heaped teaspoons of baking soda
300 Gramm of brown bananas mashed
1 teaspoon of lemon juice
40g maple syrup or coconut blossom syrup
90g melted native virgin coconut oil
50ml sparkling water
2 teaspoons walnuts chopped
Mix flour, sugar, vanilla sugar, cinnamon, baking soda and salt. Add the mashed bananas and the melted coconut oil. Add maple or coconut blossom syrup and the water and mix. Fold in the walnuts. Pour the dough into your loaf pan and back for approx. 40 minutes. Take out of the oven and let cool.
No matter how crazy life may get, this banana bread always manages to make me happy!
